Sometimes, due to &lt;a href="https://twitter.com/#!/yakmoose" title="@yakmoose" target="_blank"&gt;@yakmoose&lt;/a&gt; going a bit crazy, we have a too many beans. After some inspiration at  &lt;a href="https://twitter.com/#!/Barista_Empire" title="Little B" target="_blank"&gt;Little B&lt;/a&gt; I put together my second attempt at a cold filter coffee today.&lt;/p&gt;
&lt;p&gt;I&amp;#8217;ve no idea what kit they used but I thought my Swiss Gold with a bunch of ice, some leftover &lt;a href="http://www.coffeesupremeshop.com/beans/origins/africa/ethiopian-harrar.html" title="Harrar" target="_blank"&gt;Harrar&lt;/a&gt; and a whole lot&amp;#8217;a time (7 hours or so) might just work. I tried a few weeks ago and although I rushed it a bit, the idea was sound. Today I left it. And left it longer. And then longer. It wasn&amp;#8217;t hard to do as I was run off my feet fixing the &lt;a href="http://gravitate.co.nz" target="_blank"&gt;web&lt;/a&gt; and &lt;a href="https://twitter.com/#!/nzjames/status/159186707881791488" target="_blank"&gt;Chemexing the Don&lt;/a&gt;.  When we tried it, it was fantastic!&lt;/p&gt;
&lt;p&gt;Cold filter (is that the right name?) develops a syrupy texture, is served cold, and we serve it with a cube of ice.  But there is no bitterness, at all.  The beans were good and the flavour concentrated and perfect.
